Savoury Leek Hotcakes

Ingredients

4 cups leeks, cleaned and chopped.
2 eggs, beaten
1 1/2 cups milk
1 cup flour
1/2 tsp baking powder
Pinch of sugar
Salt and pepper to taste

Instructions

Beat together all but leeks to make a smooth batter. Add leeks and blend well. Drop on hot griddle, oiled with olive oil. Serve hot with any stew dish or plain with brown sauce.
